This is my favorite feel
good food after a yoga day. It’s a perfect combo to fuel your body after a day
of yoga class. High in protein red quinoa, high in fiber pistachios and
antioxidants rich cranberries, will make you sleep well, maintain healthy
muscles and keep up the nutrients level your body needs.
It is so easy to make
and of course you can create your own version. It’s just that I love
crunchiness, wellbeing and happiness in the same plate, and this quinoa pilaf
gives me everything, not just what I want but also what I need.
Makes 4
servings
Ingredients
2 cups water plus ¼ tsp kosher salt
1 cup red quinoa
2 tbsp. lime juice
Zest of 1 lime
2 tbsp. extra virgin olive oil
1 tbsp. agave nectar
1 tbsp. cilantro, chopped
1 ½ cups arugula
1/3 cup pistachios
1/3 cup pine nuts (toasted for 7 minutes in a preheated
350 degrees F oven)
1/3 cup cranberries
1/3 cup pecorino cheese, grated
Salt and pepper to taste
Put quinoa in a strainer
and rinse under cold water. In a saucepan bring the water with salt to a boil.
Add quinoa, stir, lower the heat and put the lid on. Simmer covered for about
15 minutes until the grains are tender and the water absorbed. Remove quinoa
from heat. Transfer to a bowl and let it cool for about 10 minutes. Fluff with
a fork to separate grains.
Mix the lime juice,
lime zest, olive oil, agave nectar and cilantro together. Add the dressing to
the quinoa and stir to mix well. Add arugula, pistachios, toasted pine nuts,
cranberries and pecorino cheese. Mix everything together. Season with salt and
pepper to taste. You can serve it warm or at room temperature. Enjoy!
