Caprese Salad


As you all should know caprese’s origins hail from the Isle of Capri in Italy. The salad is sometimes referred to as “insalata tricolore” because of the resemblance to the Italian national flag colors, red, white and green, represented in the salad by the tomatoes, fresh mozzarella and basil respectively, plus the of course very good extra virgin olive oil.
My take on this gorgeous and delightful salad, is the basics plus two of my favorite ingredients, black olives and my oven dried tomatoes, which you can replace for store bought sun dried tomatoes if you don’t have the time to cook them.  
I am sure you are going to fall in love with this version of caprese salad. Mine is all about freshness and comfort food in the same plate. I don’t know about you guys, but my style of comfort food, is one that I just need my fork to enjoy it with no need to cut any pieces down, and just be delighted by the party in mouth from all these flavors.

Serves 3
Ingredients
300grs mozzarella cheese balls
3 big plum tomatoes, ripe
1/3 cup oven dried tomatoes or sun dried tomatoes, chopped
64grs can sliced black olives
¼ cup fresh basil leaves, chopped
1 ½ tsp dried basil leaves
½ cup extra virgin olive oil
1 ½ tsp kosher salt
¾ tsp freshly ground black pepper

Combine the mozzarella cheese balls, plum tomatoes, oven dried tomatoes, black olives, fresh basil leaves, dried basil leaves and the olive oil together. Season with salt and pepper to taste, and you are done!. Enjoy!
